Here's the recipe...
Mrs. Schaefer's Pumpkin Pie Truffles
2oz Cream Cheese
1/4 C. Dk Brown Sugar
1/4 C. Powdered Sugar
1/2 C. Pumpkin Puree
1/2 tsp. Cinnamon
dash salt
dash cloves (to taste)
dash ginger (to taste)
1/2 C. White chocolate chips (melted)
1/2 C. Ground Caramel Rice Cakes
1 C. Flour (until desired thickness met)
Coating
1 C. Ground Caramel Rice Cakes
1/8 C. Brown Sugar
1/2 tsp. Cinnamon
dash cloves (to taste)
dash ginger (to taste)
Mix filling ingredients in order listed, saving flour for later.
Refrigerate 1 hour.
Add flour to mixture until desired thickness is achieved.
Roll balls into coating mixture.
